Festive Food - Panettone Bread & Butter Pudding

If you've seen our recent video with the friendly team from local Eastbourne restaurant Pomodoro e Mozzarella then like them you might have been gifted a panettone this Christmas.

This traditional sweet bread is a regular on Italian tables during the festive season and the team have shared their bread and butter pudding recipe with us for an alternative way to eat panettone. Buon Appetito!

Step 1

What you'll need:

• 4 free-range eggs
• 100g sugar
• Half teaspoon of vanilla extract
• 500ml milk
• Butter or margarine
• Half kilo of panettone

Preheat the oven to 190 C / Gas mark 5.  Butter enough slices of panettone that will fit in your dish and then cut them in half and layer them in the dish.

Step 3
Mix the milk, sugar, vanilla and eggs together and whisk in a bowl. Then pour over the bread and leave it to be absorbed for about 10 minutes.
Step 4

Place a sheet of greaseproof paper in a roasting tin (it stops the dish from sliding and the bottom from burning then put the dish in the baking tray and pour in boiling water till it’s halfway up the side of the dish.


Bake in the oven for 35 to 45 minutes, until the pudding is set and browned. Serve with cream or custard - enjoy! Step 5
